Kioku Kitchen has quickly become New Westminster’s go-to spot for Asian fusion, known for bold flavours and unexpected pairings. In a cosy 1,200-square-foot dining room with room for 40 guests and a small open kitchen, they fuse Japanese technique, Southeast Asian spice, and West Coast ingredients into dishes that locals keep coming back for.

The menu reads like a neighbourhood culinary tour. Start with their yuzu-cured salmon, followed by the Katsu Bao, a crisp pork cutlet tucked into steamed bao with pickled daikon and kewpie. If you prefer plant-forward options, try the miso-glazed maitake with sesame furikake. Weekend brunch features a matcha waffle topped with black sesame cream and house-made kuromitsu. They also offer a rotating tasting menu of five or seven courses on select Fridays, priced transparently and changed monthly to showcase seasonal B.C. produce.

Kioku Kitchen’s team includes chef-owner Sora Tanaka, who trained for six years in Vancouver kitchens and has run Kioku since 2018. Service is relaxed but precise; servers can recommend pairings from a modest but well-curated list of local craft beers, sake by the glass, and Pacific-coast wines. The open kitchen means you can watch the chefs torch miso or plate delicate sashimi in real time, which is part of the theatre here. They accommodate allergies and dietary needs with clear menu markings and are happy to customise spice levels.
